Ming dynasty, in the year of Hongxi (1425AD) under the governance of emperor Renzong, SHI Jinzhang, a brewing master, developed the method of “cellar brewing” to brew the second yeast liquor generation of Luzhou Laojiao.
The cellars of “Shujuyuan” distillery were first established in Wanli year (1573AD) of Ming dynasty. It was the first yeast liquor workshop with the brand in Luzhou, which not only inherited the local original yeast liquor brewing process, but also set “cellar group of Luzhou yeast liquor”, which is later called “1573 national treasure cellars”.
